Sushi Watermelon スイカ寿司 🍉

The MosoGourmet watermelon series is back again this year!
We made sushi that looks like a watermelon. We really enjoyed both making and eating this. It also tastes great wrapped in delicious seaweed.

Recipe (for making a watermelon with a diameter of 21 cm by 3 cm)

1. Spread 270g of tuna which has been cut at a slanted angle into the mold.
2. 18g of white sugar and 10g of salt to 40g of vinegar. Mix well.
3. Add 2 to 660g of freshly cooked rice and mix well.
4. Add 5g of powdered matcha green tea and mix. Let everything cool down.
5. Add 4 to 1.
6. Let it rest inside the fridge for around 15 minutes.
7. Cut a cucumber in half length-wise. Cut it 1.5 cm wide, and then cut it thinly using a slicer.
8. Tip 6 upside-down onto a plate, and place the cut cucumber of 7 on top of it.
9. Let it rest inside the fridge for around 15 minutes.
10. Cut steamed black beans in half.
11. Line up 10 onto 9. It was hard to decide how to do it, but in the end, we made this kind of pattern. If you want you can also cut seaweed into the shapes of seeds and use those instead.
12. All done! Pickled rice with matcha doesn’t taste bad!


1.型にそぎ切りしたマグロ 270gを敷き詰める。
2.酢 40gに上白糖 18g、塩 10gを加えよく混ぜる。
3.炊きたてのご飯 2合(660g)に2を加え混ぜる。
4.抹茶 5gを入れ混ぜる。粗熱を取る。
